Hoshizaki Ice Machines, Documented

Hoshizaki was founded in 1947 in Toyoake, Japan, and built its reputation on a hard, slow-melting cube and a reliable harvest design. The line is easy to read once you know the prefixes: KM machines are modular cubers, IM machines are self-contained cubers, F machines are flakers, and the older H platform covers earlier R-134A and R-404A units. Looking for a specific manual? Jump to your model in the table below, or start with the KM service manual as the universal service handbook for the modular line. Hoshizaki Parts and Cleaning Supplies

Common Hoshizaki replacement parts

The high-frequency wear items on Hoshizaki ice machines are the water inlet valves, the harvest-assist motors, the float switches, the water-curtain assemblies, and the condenser fan motors. Identify the part against the parts list in the service manual for your exact model, then request it through Requip Market support. Requip Market does not stock a fake parts inventory; we point you to the correct part number and the channels that carry it.

Cleaning chemicals and schedule

Hoshizaki's recommended cleaner is Hoshizaki Scale Away, used to descale the water system, paired with a sanitizer for the food-contact surfaces. A practical schedule is a weekly wipe-down and inspection of the bin and curtain, and a full descale and sanitize on a monthly to quarterly cadence depending on water hardness and duty cycle. Operators who cannot source the OEM cleaner can use a nickel-safe ice-machine descaler rated for the machine; do not substitute a general acid cleaner, and never mix cleaner and sanitizer.

Hoshizaki Troubleshooting FAQ

Why does my Hoshizaki ice machine freeze up during the harvest cycle?

A machine that ices over instead of releasing the cubes usually has a harvest-cycle problem. Check the water-curtain alignment first, since a curtain that does not seat correctly stalls the cycle. Then check the water valve for correct fill and the harvest-assist motor for movement. On the KM line the controller logs harvest faults; a long harvest that times out points to a weak hot-gas path or a low refrigerant charge.

How often should I clean a Hoshizaki ice machine?

Follow the cleaning interval in the manual for your model, which is typically a monthly to quarterly descale and sanitize, shortened on hard water. The tells that a clean is overdue are slow harvests, cloudy or soft ice, and visible scale on the evaporator. Use Hoshizaki Scale Away or a nickel-safe ice-machine descaler, and run the sanitizer as a separate step.

What is the difference between R-134A and R-404A on the H-series?

The H-series shipped on both refrigerants over its production span. R-404A and R-134A are not interchangeable; each machine is charged, metered, and labeled for one refrigerant, and the data plate states which. R-404A is being phased down under refrigerant regulations, so an older R-404A unit may need a planned retrofit path. Never mix refrigerants or top off across types; have a licensed technician confirm the charge.

Why is my Hoshizaki producing less ice than rated?

Output below the rated capacity is usually environmental or sealed-system. Start with a dirty condenser, high ambient temperature around the machine, and a restricted water supply or clogged filter, since those are the common and inexpensive causes. If those are clear, a low refrigerant charge stretches freeze time and cuts output, and that points to a leak a licensed technician needs to find.

Where do I find the model number on a Hoshizaki?

The model and serial number are on the data plate on the machine. On KM and IM cubers the plate is typically on a side panel or behind the front panel; on F-series flakers it is on the body of the unit. Record the full model number before ordering parts or downloading a manual, and use the serial number with the manual's serial guide to confirm the production era.
